Genever (sometimes spelled Jenever) is the grandmother of modern gin, originating from the Netherlands. Traditionally Genever is a blend of two spirits - a malt wine and a botanical extract, similar to Gin featuring predominantly Juniper. Malt wine (or Moutwijn) gives Genever its signature Malty taste - it is made much like whisky, however, distilled to a much lower strength to retain more malty characteristics. This homage from Hurdle Creek Still blends 33% malt wine that has been briefly aged in oak, with a clean grain spirit featuring traditional and native botanicals and a lick of eucalyptus honey.

Fresh cut green apples and pears leap out of the glass, melding with sweet malt. A touch of new oak and pine comes quickly after, with a herbaceous backing of sage, bay leaf and marjoram.
